August 31,2006 I'm playing hooky from work today, well it feels like playing hooky. I had it scheduled but didn't really need to be off. But after the last couple of weeks, it didn't take much arm wrestling with my work ethic to decide I was taking it! I had plenty of things to do before taking off in the motorhome for our Labor Day destination -- Tonganoxie, Kansas! I started at 7:30am, regular go to work time and just kept at it. Laundry and dishes; I won't have to wash uniforms Monday after we get back and left the sink clean for the weekend. Bundled up all the carry-back-and-forth stuff like pillows and clothes, medicine and the grill we like to much to leave in the motorhome (I had to scrub it too, we'd used it last night!) Last but not least, David had requested no-bake cookies which absolutely do not cook right on the road. NO-BAKE COOKIES 2 cups of sugar 1/4 cup of cocoa 1 stick of oleo 1/2 cup of milk Melt the oleo over low heat. Throw in the sugar and cocoa and stir it up. Add milk. At this point set your timer for 1 minute, but don't start it! Bring your mixture to a FULL ROILING BOIL. Start your timer and stir constantly for 1 minute at FULL ROILING BOIL. Mind you do not mistake a few bubbles for a full roiling boil. When the timer sounds, immediately remove pan from heat. Stir in: 1 teaspoon vanilla 1/2 cup of peanut butter 3 cups of quick oats Mix and spoon out onto foil. Let set. I always double the recipe and they never last. Enjoy! |
