Oh Gail! My mother always made potato cakes too - the exact same way. They were delicious - much better than the mashed ones to begin with. Once in a great while I remember and make them to this day...wonder if this is a Kansas recipe? ha, ha

Yes I do love those potato cakes w/ only one change in your orginal recipe by adding a tiny dash of garlic powder. Thanks for the memories!

Me too kids, and my mom was a Kansas girl as well, only neither she or I had the chickens or the AAA eggs you describe. What grand memories and the bacon fat doesn't seem to have hurt me a bit.......Kath

Ah, how this takes me back! Our Mother's potato cakes were a sumptuous repast from the gods, and I've never been able to duplicate the taste. Not surprising since I only have access to store eggs, but perhaps not having Mother's hand on the spoon has something to do with it! Carol
